Beef and Cabbage Pitas

Ingredients

2 slices Bacon, chopped

1 lb. Lean ground beef

1/2 cup Chopped onion

4 cups Purchased coleslaw blend

1/2 tsp Salt

1 tbsp Brown sugar

1 tsp Cornstarch

2 tbsp Cider vinegar

1 tbsp Water

3 (6 or 7-inch) pita (pocket) breads, cut in half, heated

Preparation

1 - Cook bacon in large skillet over medium-high heat for 2 minutes. Add ground beef and onion; cook 5-6 minutes or until beef is browned, stirring frequently. Drain.

2 - Add coleslaw blend and salt; mix well. Reduce heat to medium; cover and cook 10-12 minutes or until ground beef is thoroughly cooked and cabbage is tender, stirring frequently.

3 - Meanwhile, in a small bowl, combine brown sugar, cornstarch, vinegar and water; blend well.

4 - Stir in vinegar mixture into beef and cabbage mixture. Cook until thoroughly heated. Spoon mixture into warm pita bread halves.
