1. Heat oven to 350 degrees. Line pan with non-stick foil and extend over the edges about 2 inches.
2. TOPPING: Mix flour, cracker crumbs and sugar in a medium size bowl. Add butter and mix well until crumbs form.
3.CAKE: In a large bowl, beat butter,sugar, vanilla, cinnamon, salt, baking powder and soda until creamy. Beat in 1 egg at a time until blended well. Add flour and sour cream alternatelty beginning and ending with flour. Blend until smooth.
4. Spoon 1/2 of batter into the 13x9 baking pan. Layer 1/2 of the apples on top. Spoon other 1/2 of batter on top of apples. Layer other 1/2 of apples on top of the second layer of batter. Top with crumb topping mixture.
5. Bake for 45 minutes or until a wooden stick inserted into the center comes out clean. Lift cake out of the baking pan by the foil and set on a cooling rake. Dust with Confectioner's sugar. Serve warm or cold.
