Pork & Cider Stew

Ingredients

2 Meduim sweet potatoes, peeled and cut into 1 in. cubes

3 Small parsnips or carrots, peeled and cut into 1/2 in. slices

1 c. Chopped oinion

2 lbs. Boneless pork shoulder, cubed

1 Large Granny Smith apple, peeled, cored and coursely chopped

1/4 c. Flour

3/4 tsp. Salt

1/2 tsp. Each dried sage and thyme

1/4 tsp. Pepper

1 c. Apple cider

Preparation

1. Layer sweet potatoes, parsnips, oinions, pork and apple in the 3 1/2 quart slow cooker.

2. Stir together flour, salt, pepper, sage and thyme in a small bowl. Add apple cider and stir until smooth. Pour over meat & vegetables.

3.Cook on low for 7 to 9 hours until vegetables are tender.

4. Serve with a multigrain or brown bread.
