Fresh Peach Cobbler

Reinterpretation of a Recipezaar recipe

Ingredients

4 Large peaches, peeled, sliced

1 cup Sugar, divided

1/2 teaspoon Ground cinnamon, divided

1/4 teaspoon Cloves

1/2 cup Butter, melted (I used light)

3/4 cup Flour

1/4 c Oatmeal (I ground mine into a powder)

2 teaspoons Baking powder

1/4 teaspoon Salt

1 teaspoon Vanilla extract

3/4 cup Milk

Preparation

In large bowl, combine (toss), peaches, 1/2 cup sugar, and ¼ teaspoon cinnamon. 1/4 teaspoon cloves

Set aside.

Melt butter and pour into an 8” square baking dish or pan.

In another lg. bowl, whisk together flour, oatmeal, baking powder, salt ¼ teaspoon cinnamon, and 1/2 cup sugar til all mixed.

Stir in milk and vanilla til just combined.

DON’T over mix.

Pour batter over butter evenly.

Top batter evenly with peaches, (drizzle any leftover sugar mixture over peaches).

0Bake at 375• for 45-50 minutes, til top is done. Make sure dough in middle is cooked through.

4-6 servings.

(*Serve still warm with vanilla or butter pecan ice cream!) (*Double this for a 13x9 pan).
