Chicken Cacciatore

Crock pot meal.

Ingredients

4 Chicken thighs, bone and skin removed (substitute other cut if desired)

1 Green pepper, chopped

1 Yellow squash, chopped

1 Zucchini, chopped

8 ounces Sliced mushrooms

1 28-ounce Can chopped tomatoes

1 Bay leaf

Preparation

Place chicken in the bottom of a crock pot and add all ingredients on top. cover and coook on low for 8 to 10 hours or on high for 4 hours. Serve with a side of pasta.

Cook's Notes

4 servings, 2 vegetable, 2 protein. (pasta separate)
