Broccoli Salad

Ingredients

1.5 cups Broccoli, cut into 1 inch pieces

1/2 cup Carrot chunks

2 tbsp Italian dressing

Preparation

Steam the vegetables for 5 minutes. Or sprinkle the vegetables with water and microwave covered in a microwave-safe dish for 3 minutes at full power, then stir and cook 1 minute more.

Put the cooked vegetables in a bowl and toss with the salad dressing. Serve warm or chilled.

Cook's Notes

2 1-cup portions, 1 fat, 2 vegetable (low fat dressing = 1/2 fat exchange)
