Fast Taco Soup

Ingredients

1 tablespoon Olive oil

1 lb Lean ground beef

1 can Corn, drained

1 (15 oz) can Dark red kidney beans (do not drain)

4 cups Low-sodium tomato juice

1 package Taco seasoning

Shredded cheese

Preparation

1. Heat the oil in a medium skillet over medium-high heat. Add the beef and cook until no longer pink and starting to brown. Drain well and set aside.

2. Meanwhile, combine the remaining ingredients except garnishes in a large pot and bring to a boil.

3. Add the hamburger to the pot and simmer for about 10 minutes. Serve with shredded cheese.
