Buttermilk Chocolate Bread

Ingredients

1 cup Sugar
1/2 cup (1 stick) softened butter
2 Eggs
1 cup Buttermilk
1-3/4 cups Flour
1/2 cup Unsweetened cocoa
1/2 tsp Baking powder
1/2 tsp Baking soda
1/2 tsp Salt
1/3 cup Chopped nuts (optional)

Preparation

Preheat oven to 350 degrees F. Grease bottom of loaf pan. Combine sugar and butter in a large bowl and blend well. Add eggs and blend well. Stir in buttermilk. Add flour, cocoa, baking powder, baking soda, and salt; stir just until dry ingredients are moistened. Stir in nuts, if using. Pour into prepared pan.

Bake for 55-65 minutes until toothpick inserted in center of loaf comes out clean. Cool 15 minutes; remove from pan. Cool completely. Wrap tightly and store in refrigerator.

Cook's Notes

I use Dutch-processed cocoa for extra dark color and intense chocolate flavor. Buttermilk is important for the cake-like moistness; acidified milk just doesn't have the same thickness as buttermilk.
