1. To make dressing, combine the mayonnaise and chutney in a small bowl, stir to mix well. Set aside.
2 To heat the pita pockets, place them on a microwave-safe plate. Cover with damp paper towel, and microwave on high power for about 45 seconds or until warm (If heating only 1 pita at a time, microwave only 15 seconds)
3. To assemble the sandwiches, place 1 oz of chicken/turkey in each of the 8 pita halves. Add 1 leaf of lettuce, a few rings of onion, 3 to 4 cucumber slices, and some of the dressing. Serve immediately.
