Ham and Swiss Omelet

Ingredients

3 tbsp Diced lean ham or Canadian bacon (about 1oz)

1/2 cup Fat-free egg substitute

3 tbsp Shredded nonfat or reduced fat Swiss cheese

1 tbsp Finely chopped fresh parsley

Preparation

1. Coat nonstick skillet with cooking spray, and preheat over medium heat. Add the ham or bacon and cook until nicely browned. Remove the meat to a small dish and cover to keep warm.

2. Respray the skillet and add the egg substitute and cook without stirring for about two minutes, or until set around the edges.

3. Cook for another minute or two, or until eggs are almost set.

4. Arrange first ham or bacon and then the cheese over half of the omelet. Fold the other half over the filling and cook for another minute or two or until cheese is melted and the eggs are completely set.

5. Slide omelet onto a plate, sprinkle with parsley and serve hot.
