Crunchy Salad
Serves 2-3
2 Large carrots, coarsely grated
1 Small fennel bulb, thinly sliced
1 Cucumber, diced
1 Green apple, diced
1 Shallot, finely diced
1 Red bellpepper, diced
100 ml (about 0.4 cups) salted, roasted peanuts, rinsed or lightly chopped cashews
For the dressing:
100-200 ml Thick yogurt
1 tbsp White wine vinegar
2 tsp Dijon mustard
2 cloves Garlic
2 tsp Sugar
Black pepper
Mix all the ingredients for the salad, and then everything for the dressing. Serve with a good bread - like potato bread.
