Bake the pastry shells according to the package directions. Remove from the baking sheet and cool on a wire rack.
Put frozen berries in a bowl and sprinkle with sweetener to taste. Place in the refrigerator a and allow to macerate (thaw & become juicy). Add more sweetener if necessary.
To serve pull the cap or center out of the pastry. Fill the center with berries and juice. Top with a dollop of Whip Cream and the cap from the pastry (kind of offset the cap). Garnish with a sprig of mint.
