Chilled Cucumber and Mint Soup - South Beach Diet Phase 1 2 3

Ingredients

3 Cucumbers, peeled, seeded, and roughly chopped

1 Scallion, sliced

1 Garlic clove, chopped

3 tbsp. Fresh mint leaves

1/2 c Water

8 oz. Greek style yogurt, plain OR sour cream

1 tbsp Fresh lemon juice

1/4 tsp Salt

1/4 tsp White pepper

Preparation

Puree cucumbers, scallion, garlic, mint, and water in a blender until smooth. Add sour cream, lemon juice, salt and pepper and blend to combine.

Chill in refrigerator about 3 hours until cold, or for serving immediately, chill over a bowl full of ice and cold water, stirring occasionally until chilled.
