Brown Rice Flour Tortillas

Gluten free flour tortillas. Easy to make and taste great.

Ingredients

1/4 cup Brown rice flour

1/4 cup Tapioca starch

1/4 cup Corn starch

1/4 cup Potato starch

1/4 cup White rice flour

1 teaspoon Salt

1 1/2 teaspoon Xanthan gum

1 teaspoon Baking powder (generous)

1 1/2 tablespoon Vegetable oil

1/2 cup Water or more as needed

Preparation

1. Mix together the dry ingredients well.

2. Add the wet ingredients and mix until it forms a ball. Add more water if needed.

3. Knead a little bit to make it stick together properly then let rest 10 minutes.

4. Break into 4 pieces and roll into tortillas with a rolling pin. It helps to dust the rolling pin and counter with white rice flour before hand.

5. Fry on a VERY HOT griddle for about 30 seconds per side.

Cook's Notes

I haven't tried but these would probably be just as good if the corn starch were replaced with another one of the starches and the xanthan could probably be replaced with guar gum.
