Baked Potato Salad

This is a homemade version of the baked potato salad I get from our local grocery store

This is a perfect dish to take to BBQ's, its simple and delicious. If your planning on a larger number of people you might want to double the recipe.

Ingredients

3 Large baked potatoes, cooled and cubed (red potatoes also work very well)
1/2 cup Sour cream
1/2 cup Mayo or light mayo
8 slices Bacon, cooked and
Crumbled
4 ounces Shredded cheddar
Cheese, divided
2 Green onions, sliced and then chopped (green part only)
1/2 tsp Black pepper
1/8 tsp Celery salt or seasoning salt
1/8 tsp Garlic powder
1 Dash paprika
1 tbs Fresh parsley

Preparation

gently stir all ingredients in a large bowl, saving some cheese, bacon, and green onions for a garnish.

Pour the mix into the serving bowl and top with the remaining ingredients.
