Salmon Tacos

A (soft) taco filling combining salmon with a papaya salsa.

Ingredients

1 lb Salmon fillet

1 Medium papaya

2 Medium tomatoes, seeded and diced

1 Small onion, diced

1/4 cup Cilantro

2 Limes, juiced

Salt/pepper to taste

Hot sauce to taste

Preparation

Combine all ingredients but the salmon, the hot sauce, and some of the lime juice in a large bowl, adjusting proportions until it tastes good.

Skin the salmon fiillet, remove bones, and cut into 1-in cubes.

Fry the salmon in a large skillet, 5-8 minutes. I typically add about half of the salsa to the pan after about 2-3 minutes.

Spoon salmon plus additional salsa into flour tortillas, wrap, and enjoy
