BBQ chicken -hawaiian style

This recipe has been in my family for years. The soy sauce/water ratio is always 1 to 1 but the rest of the ingredients can be adjusted to your own tastes. You can even add guava or orange juice concentrate to the marinade if you like.

Ingredients

1 cup Soy sauce

1 cup Water

1/4 cup Sugar

1/2 tsp Ground ginger

Or 1 inch grated ginger

1 Green onion, sliced (optional)

1/4 to 1/2 tsp Chopped garlic

Dash salt and pepper

6-8 Chicken thighs

Preparation

Combine all ingredients and marinate overnight or for at least 4 hours. Grill over medium hot coals for about 40 minutes for bone-in, turning frequently. Serve with rice and macaroni salad or potato salad.

Cook's Notes

If you grill it with skin on, it will have some charring on it.
