Ingredients
1.25 lb Ground turkey, marinate 15 mins ahead
1 tbl Lime/lemon, juice
2 Green bellpeppers, thin strips
1 Med. zucchini, sliced into thin strips
1 Med. onion minced tiny
2 Carrots grated/sliced
1 Serrano chile, minced
3 Garlic cloves, minced
2 tsp Each: salt, cumin powder, and chili powder
2-3 Stems of green onions
Preparation
1 )Mix ground turkey with minced garlic, serrano chiles, and onions and 1 tsp of all four seasonings. Set aside for 15 mins.
2) Chop green onions, bell peppers, and zucchini. Grate carrots and season lightly with seasoned salt.
3) Saute meat in skillet on 6 heat for 10 mins. Add bell peppers, zucchini and cook 10 mins. Add carrots and green onions last cook for 5 mins. Stir often.
4) lastly, heat tortillas in oven, first place on a cooking pan use hot pad to remove. Cook food first and tortillas shortly before serving.
