Ingredients

2 Eggplants

1 Onion

1/2 jar Scicilian spicy eggplant sauce by Seeds of Change

1/2 jar Marinara sauce

Parmesean cheese

Preparation

1. cut onion

2. peel and cut eggplant into small cubes

3. sautee onion

4. sautee eggplant in same pan until they're cooked just about all the way through

5. add sauce and simmer for 5 or ten minutes, making sure the eggplant is cooked thoroughly

6. serve over pasta with freshly grated parmesean cheese
