Combine the first 5 ingredients in a bowl and mix well. Add 1/2 of the parsley leaves to the bowl.
To prepare the shark meat, run it under cold water and genty cut and peel any skin away. Pat dry with papertowels when done.
Marinate shark in liquid mixture for one hour, or overnight.
Mix flour and remaining parsley together. Coat shark steaks with the flour mixture.
Cook on the BBQ or grill for 6-8 minutes each side, or until fish flakes easily when tested with a fork. Use remaining marinade to baste fish while on the grill.
