Chicken Ragout with Potatoes and Olives

A nice way to do chicken

Ingredients

1 1/2 pound Skinless boneless chicken thighs

1/2 tsp. Salt

1/4 tsp. Coarsely ground black pepper

1 tsp. Olive oil

1 Onion, thinly sliced

1 Garlic clove, chopped

3 Plum tomatoes, chopped

1 Large baking potato, peeled and cubed

10 Kalamata olives, pitted and sliced

1/2 c. Reduced-sodium chicken broth

1/4 c. Dry white wine

1/2 c. Chopped fresh basil

Preparation

1. Sprinkle the chicken with salt and pepper.

2. Heat the oil in a large nonstick skillet over medium-high heat. Add the chicken and cook until browned, 2 - 3 minutes on each side. Add the onion and garlic; cook until the onion is just tender, about 5 minutes. Stir in the tomatoes, potato, olives, broth, and wine; bring to a boil. Reduce the heat and simmer, covered, until the chicken is cooked through and the potato is tender, about 20 minutes.. Remove the skillet from heat and stir in the basil.
