Breakfast fig & nut cookies

Great after exercise snack or breakfast cookie

Ingredients

3/4 cup Packed brown sugar

1/4 cup Butter, melted

2 Large eggs

1/4 cup Plain yogurt

1/2 cup Finely chopped dried figs (4 dried figs)

1/2 cup Sweetened dried cranberries

1 tsp Vanilla extract

1 cup All purpose flour

1/2 cup Whole wheat flour

1/2 cup Unprocessed bran

1/2 tsp Baking soda

1/4 tsp Ground cinnamon

1/4 tsp Ground allspice

1/2 cup Sliced almonds or pecans or walnuts

2 tsp Granulated sugar

Preparation

Preheat oven to 350

Combine first four ingredients in large bowl(brown sugar through yogurt)

Add figs, cranberries and vanilla

Lightly spoon flours into dry measuring cups, level with a knife. Combine flours, bran, baking soda, cinammon and allspice, stirring with a whisk.

Add flour mixture to to egg mixture, stirring just until moist. Gently fold in nuts.

Dropp by level 1/4 cup measures 4 inches apart on two baking sheets lined with parchment paper. Sprinkle evenly with sugar.

Bake at 350 for 15 minutes or until almost set.

Cool 2 minutes on pans, remove from pans and cool completely on wire racks.

Cook's Notes

The original recipe in Cooking Light called for 1/2 the figs, cranberries and nuts - I doubled them, and I added the yogurt becuase the original recipe was very dry.
