Chicken Tortilla Soup

Ingredients

3 Cooked chicken breasts, torn

1 Small brick Velveeta

2 cans Rotel, undrained

2 cans Black beans, drained and rinsed

1 can Corn, undrained

1 Packet Taco Seasoning

1 can Evaporated milk

1 can Chicken broth

Milk to desired consistency

Onion powder

1 can Chopped olives (optional)

1 Packet Spanish rice, cooked

Preparation

Cube Velveeta and melt in pot with milks and broth. Add taco seasoning. Add all other ingredients with juices gradually, (except beans). Let simmer for about 30 minutes, stirring occasionally to keep cheese from burning. (Soup can be transferred to crock pot at this time.) Top with crushed tortilla chips, tortilla pieces, shredded cheese or sour cream.
