Homemade Flour Tortillas

Ingredients

2 cups Flour

1 1/2 tsp Baking powder

1 tsp Salt

2 tsp Oil

3/4 cup Warm water

Preparation

Mix the flour, baking powder and salt in a mixing bowl

Add the oil to the warm water

Add the oil/water mixture to the flour mixture, one tablespoon at a time

Mix the doguh after each addition of oil/water

Repeat this process untill all the oil/water has been added...the dough will be sticky

Knead the dough on a floured sufface for 4-5 minutes, adding more flour as needed

Place the dough back in the mixing bowl and cover with a damp towl

Let the dough rise for 20 minutes

Pinch the dough into 12 golf ball-sized balls and cover with damp towel

Let the balls rest for 10 minutes

Preheat a cast iron skillet or other skillet over medium heat

Roll out the balls to a 6 or 7 inch diameter circle, about 1/8 inch thick

Place one tortilla in the preheated skillet and cook for about 30 seconds

Flip the tortilla over and cook the other side

Repeat this process will the remaining tortillas

Cook's Notes

Sometimes I will double the recipe inorder to have extra dough which can be flatten out into a 3 to 4 inch circle and fried to make sopapillas. Once puffed and browned....sprinkle with cinnamon sugar.
