Cannelini Bean and Tomato Crostini

Ingredients

1 tbsp Olive oil
3 cloves Garlic, minced
1 15 oz. Can cannelini beans, drained - reserving 1/4 c. liquid
1/2 tsp Sea salt
1/8 tsp Black pepper
1 1/2 tbsp Fresh basil, chopped
1 tbsp Fresh parsly, minced
2 tsp Fresh lemon juice
1/2 c Canned diced tomatoes with basil, well-drained
Baguette, sliced

Preparation

Heat oil in a medium skillet and saute garlic for 1 min. Add the beans, reserved bean liquid, sea salt, and pepper. Cook 2-3 min. Add basil, parsley, and lemon juice. Mix thoroughly. Mash half the beans with a fork. Set aside.

If using baguette, place slices on a baking sheet and bake about 5 min. at 350 degrees until crispy. Remove and top with equal amounts of bean puree and tomatoes.
