Hot Chicken Mexican Dip

Easy and delicious hot dip! Just get out the taco or tortia chips!!

Ingredients

1 can Whilte meat chicken

1/2+ jar Garden salsa (drain off excess liquid - so it's thick)

I prefer mild salsa - but some like it hot!

1 cup Reduced fat shredded cheddar cheese

1/2 - 1 can Mexican refried black beans - reduced fat of course

1 can Sliced black olives - drained

1 bag Taco Doritos

Preparation

Lightly spray the bottom and sides of a flat bottom, medium sized bowl or deep sided tray, flake chicken.

spoon 1/4 - 1/3 jar of thick garden salsa over chicken and gently spread in a layer

Dot with 1/2 - 1 can of refried black beans

sprinkle top generously with cheddar cheese

spoon 1/4 - 1/3 jar of thick garden salsa over cheese

Microwave, covered with plastic wrap, for 2-3 minutes at a time, at a low power setting of 40. You will have to microwave it several times, judged by how hot the base of you dish is getting in the center, and on whether the top looks like the cheese is melted and the dish is hot and bubbly. Do not cook at much higher temperature because the goal is to make the entire dish hot, without burning the cheese. Do not stir!!!

Serve hot with Taco Flavored Doritos for scooping (though any tortia chips would do).
