Basic Baked Potato Skins

Ingredients

4 Baked potatoes, preferably russet, cooked and cooled

4 Strips bacon, cooked

2 cups Cheddar cheese, shredded

Preparation

Preheat over to 400F. Cut potatoes in half, length wise, and scoop out most of the inside, but leave a pretty thick wall of potato under the ski. (Set aside extra potatoe inards for a dish later) Put the 8 potato halves on a baking sheet. Chop bacon and divide among the potatoes. Divide cheese among the potatoes. Bake for 15-20 mins., until cheese is melted and bubbling.

Cook's Notes

Other toppings: sour cream, salsa, chopped scallions, chives or whatever.
