Preheat over to 400F. Cut potatoes in half, length wise, and scoop out most of the inside, but leave a pretty thick wall of potato under the ski. (Set aside extra potatoe inards for a dish later) Put the 8 potato halves on a baking sheet. Chop bacon and divide among the potatoes. Divide cheese among the potatoes. Bake for 15-20 mins., until cheese is melted and bubbling.
