EVOO
3 cloves Garlic
1 Bay leaf
1 JalapeƱo, seeded
1 Onion, chopped
1 Sweet red pepper, chopped
4 Celery sticks, chopped

3 cans Black beans, 2 drained and 1 mashed with a fork
1 can Diced tomatoes w/peppers and onions

Chicken stock to desired thickness
1 1/2 teaspoon Coriander
2 tablespoons Ground cumin
1 tablespoons Hot sauce
Salt and pepper
Into large soup pot on medium heat add all of #1 ingredients. Stir #2 ingredients into pot. Add #3 ingredients to pot and simmer.
Can use for leftovers such as mixing with rice, add other pastas, or mix with chicken or pork chops.
