10 oz. Bag lentils, rinsed
2 cups Water
1 Whole bay leaf
2 tsp. Salt
1/4 tsp. Pepper
1/8 tsp. Margarine
1/8 tsp. Sage
1/8 tsp. Thyme
2 Large onions, chopped
2 cloves Garlic, minced
2 cups Canned tomatoes
2 Carrots, sliced
1/2 cup Celery, thinly sliced
1 Green pepper, chopped
2 tbsp. Parsley, finely chopped
3 cups Cheese
Salsa
Preparation
Combine first 11 ingredients (through tomatoes) in 9x13 pan, cover with foil and bake at 375 degrees for 30 minutes.
Uncover and stir in carrots and celery.
Cover and bake 40 minutes.
Uncover and stir in green pepper and parsley. Spread cheese on top and bake uncovered 5 minutes.
Serve with salsa.
