Cajun Rice Quiche

If you pre-cook and pre-chop the veggies, this is quick and easy. It will take over 30 minutes prep time, if you don't do some of the work in advance. You can substitute Morningstar Farms or another brand of veggie sausage to make this a wonderful vegetarian meal.

Ingredients

Crust:

2 cups Cooked long grain rice (white or brown) cooled

1 tsp Garlic powder

1 tsp Onion powder

1/2 tsp Salt

1 large egg

Cooking spray

1/4 cup Shredded cheddar cheese

Filling:

1/2 cup Prechopped onion

1/2 cup Prechopped celery

1/2 cup Prechopped red bell pepper

1 tsp Bottled minced garlic

2/3 cup Chopped andouille sausage-use morningstar farms breakfast links to make this vegetarian!

3/4 cup Eggs

1/4 cup Plain organic yogurt

1/4 tsp Salt

1/4 tsp Hot pepper sauce

2 Large Egg Whites

1/4 cup Shredded reduced fat cheddar cheese

Preparation

1) Preheat oven to 375

2) To prepare the crust, combine rice, garlic powder, onion powder, 1/2 tsp salt, and 1 egg. Spread the mixture into the bottn and up the sides of a 9 inch pie plate coated with cooking spray. Sprinkle the bottom of the crust evenly with 1/4 cup shredded cheddar cheese.

3) To Prepare the filling, heat a medium nonctick skillet over medium-high heat. Coat the pan with cooking spray. Add onion, celery, bell pepper, garlic, and sausage. Saute for 5 minutes. Spoon mixture evenly in the rice crust. Combine egg substitute, yogurt, salt, hot pepper sauce and egg whites. Stir with a whisk until well blended. Pour the egg mixture over the sausage mixture. Sprinkle with 1/4 cup shredded cheddar cheese.

4) Bake at 375 degrees for 30 minutes or until the center is set. Let stand 5 minutes before serving.
