Southwestern Chicken Hash

Serve with cornbread or tortillas 1 serving = 6 points

Ingredients

4 cups Southern style hash browns

1/2 cup Frozen chopped onion

2 1/3 cups Chopped cooked chicken breast

14 oz Can mexican style stewed tomatoes

8 3/4 oz Can whole kernal corn, drained

1/2 tsp Ground cumin or chilli powder

1/4 tsp Salt

Preparation

1. Coat large nonstick skillet with cooking spray. Place pover medium high heat until hot.

2. Add potatoes and onions. Cook 10 minutes or until browned, stirring often.

3. Add chicken and remaining ingredients to skillet. Cook 5 minutes or until thoroughly heated. Stirring often.
