Greek Style Brown Rice

Tasty side dish for fish, lamb, or chicken

Ingredients

1/2 cup Brown rice

1 cup Water

1/2 tsp Salt

1 tbsp Olive oil

1 Med chopped tomato

1/2 Med cucumber, peeled and chopped

2 tbsp Chopped fresh dill

2 tbsp Chopped fresh parsley

2 tbsp Lemon juice

Preparation

Cook brown rice and allow to cool. Chop the tomato, cucumber. Add to cooled rice. Add the choppped herbs and lemon juice and garlic. Serve chilled.

Cook's Notes

While brain storming as what to eat on a detox diet this recipe evolved out of left over brown rice I had in my refridge. I like to add cooked and cooled salmon to this. I take this to work as part of my lunch.
