My father's perfected chili recipe.

Ingredients

1 lb. Ground round
1/2 Med. onion
1/2 c. Green pepper
1 stalk Celery, strings stripped
5 slices Raw bacon, diced
2 t. Chili powder
1 t. Olive oil
1 c. Navy beans, cooked
2 t. Molasses
2 t. Tabasco sauce
1/2 t. Cloves
1 t. Cumin
1/2 t. Cumin, added the last 5 minutes
1 c. Whole canned tomatoes
 Salt and pepper to taste

Preparation

Grind ground round, onion, pepper and celery in food processor. Saute bacon, do not drain; add onion green pepper and beef mix with chili powder. Saute until brown. Add olive oil. Add all remaining ingredients except 1/2 t. cumin. Mix well. Simmer 3 hours in slow cooker on low, covered. Cook 1 hour on high, uncovered. Add 1/2 t. cumin. Cook 5 minutes on high, covered.

Cook's Notes

It was a life passion for my father to find: the perfect chili (this recipe), the best Homemade BBQ sauce and the ideal meatball sub.
