3-bean Vegetarian Chili

100% Vegetarian, with plenty of vegetables and protein. Packs up light and reheats well in the microwave. Can be made vegan.

Ingredients

1 can Navy beans

1 can Black beans

1 can Kidney beans

1 28 oz Can roasted tomatoes

1 Small can diced green chiles

1/2 tsp Cayenne pepper

1/2 tsp Chili powder

1/2 tsp Cumin

1/2 tsp Chipotle pepper

2 Dashes tobasco

1/2 Onion chopped

1 Red bell pepper chopped

2 tbl Olive oil

1.5 cups Cooked barley

6 tbl Sour cream

6 oz Mozzarella cheese

Preparation

In large saucepan, heat the oil over med high heat. Add the onions and peppers and cook until they begin to brown and soften. Add all other ingredients (except for barley, sour cream, and cheese). Bring to a boil. Reduce heat and simmer for 20 minutes.

Serve over warm barley, and top with sour cream and cheese.
