Ingredients

2 Ripe avocados

2 Small bell peppers, minced

4 Medium tomatoes, chopped

1/8 cup Carrot, finely shredded

1 clove Garlic, peeled and minced

1 Orange juiced

8 Leaves dark green lettuce

Preparation

in a medium bowl, mash avocados and fold in peppers, tomatoes and carrots and garlic. Squeeze orange juice over the top. Equally divide mixture between leaves and roll up like a burrito.

may serve with salsa
