19-oz. Can Chickpeas (garbanzo beans), drained and rinsed.
10-oz. Can Mandarin Orange Segments, drained
1 cup Sliced Strawberries
2 Tbps. Apple Cider Vinegar
2 tbsp. Olive Oil
1/4 cup Sliced Almonds
1/3 cup Chopped Sun-dried Tomatoes
2 Green Onions, finely sliced
1 clove Garlic, minced
1 tsp. Finely Chopped Fresh Ginger
Chopped Fresh Parsley and Light Feta Cheese (Optional)
1. Place chickpeas in a large bowl. Add remaining ingredients and mix well.
2. Garnish with parsley and crumbled feta cheese before serving if desired.
