Bruschetta with Sun-Dried Tomatoes, Pesto & Fresh Mozzarella

Ingredients

1 Loaf French bread (not baguette), cut into 6 1-inch thick slices
1/4 cup Olive oil
6 tbsp Basil pesto (prepared is OK)
1/2 lb Fresh mozzarella cheese, sliced
1/4 cup Oil packed sun-dried tomatoes, chopped
1/4 cup Fresh Parmesan cheese, grated

Preparation

Preheat grill. Brush bread slices with olive oil and grill lightly on each side to toast. Arrange bread on a baking sheet.

Preheat oven to 400 F. Spread each bread slice with 1 tbsp pesto sauce. Top with slices of mozzarella and then sprinkle with sun-dried tomatoes and Parmesan cheese. Bake for 5-6 minutes or until cheese softens.

Serve immediately.
