Super Stuffed Yams

My invention

Quick and colorful lunch or dinner.

Ingredients

1 6" yam
4 oz. Pre-cooked chicken breast
1/4 cup Black beans
 Salsa to taste

Preparation

Cook the yam in the microwave for 6 to 8 minutes. Cut open and fill with room temp chicken and black beans and cover with salsa. For a vegetarian version just leave out the chicken.
