2 good Twice-Baked Potato

Better-for-you twice baked potato!

Ingredients

1 Medium baking potato

1 Slice fat-free cheese

1 oz Fat free liquid non-dairy creamer

Salt, paprika, parsley to taste

Preparation

Preheat oven to 375 degrees

Puncture potato in several places. Peel skin off top of potato and cook in microwave for 6-8m minutes.

Once potato is cool enough to handle, scoop out insides, leavning behind an empty potato shell. Set aside.

Place potato pulp in small dish, then add cheese, creamer, and a little salt. Mash all together until cheese melts, leaving a creamy, cheesy mashed potato mixture.

Place potato mixture back into potato shell and sprinkle with paprika and parsley.

Place potato in baking dish sprayed lightly with nonstick spray and bake in the oven for 20-30 minutes until top is brown.
