Ingredients
1 cup Dried black beans
3 cups Water
1 can 14oz chicken broth
1 Bay leaf
1 1/2 tsp Olive oil
1 Med onion, chopped
1/4 cup Red bell pepper, chopped
1/4 cup Yellow bell ppr, chopped
2 cloves Garlic, minced
1 Jalepeno pepper, seeded/chopped
1 Lrg tomato, seeded/chopped
1/2 tsp Salt
1/8 tsp Black pepper hot sauce opt
Preparation
1. Sort and rince black beans. Cover with water and soak overnight; drain. Place beans in large saucepan with chicken broth; bring to a boil over high heat. Add bay leaf. Reduce heat to low; cover and simmer about 1 1/2 hrs or until beans are tender.
2. Heat oil in large skillet over medium heat. Add onioln, bell peppers, garlic & jalapeno; cook 8 - 10 min or until onion is tender, stirring frequently. Add tomato, salt and black pepper; cook 5 min.
3. Add onion mixture to beans; cook 15 to 20 min. Remove bay leaf before serving. Serve with hot sauce and garnish. if desired.
