Chocolate Chip Cookies

Ingredients

1 cup Shortening
3/4 cup Sugar
3/4 cup Packed brown sugar
1 tsp. Vanilla extract
2 Eggs (add one at a time)
2 1/4 cup Flour
1 tsp. Baking soda
1 tsp. Salt
1 cup Chocolate chips.

Preparation

Preheat oven to 350 degrees

Combine first 4 ingredients. Add eggs one at a time. Beat these ingredients until they are light colored and nice and fluffy. Combine dry ingredients and add all at once. Beat until dry ingredients are just barely combined. **The less you work the dough at this point the more tender your cookies will be. The dough should be pretty dry, not stick on your fingers too much. If it is too gooey you can add a couple of tablespoons of flour to make it drier (you may have to experiment). Stir in chocolate chips.

Drop good sized balls of dough (about 1 1/2 - 2 Tbs) onto an ungreased cookie sheet. Cook for absolutely no longer than 10 minutes. They don't look done - they should be nice and pale. But they continue to cook for a few minutes so usually they're just right. If you want them really doughy, cook for 8-9 minutes.
