Mexican Chicken Salad

A filling salad

Ingredients

3 Chicken breasts
1 pkg 8-12oz prepared salad
1 can 15oz black beans rinsed and drained
1 Canned corn
1 Large tomato chopped
1/4 cup Olive oil
1 tsp. Grated lime peel
3 tbs. Lime juice
2 tbs Fresh cilantro finely chopped

Preparation

Toss salad blend, black beans, corn and tomatoe in large serving bowl: set aside.

Combine oil, lime peel, lime juice, and cilantro in a small bowl. Set aside.

Season and grill chicken breast (george forman grill) 2 mins each side.

Slice chicken breast and toss with salad. Pour dressing over salad toss to evenly coat.
