1. Heat oven to 400. Grease bottoms only of 12 medium muffins cups, 2 1/2 x 1 1/4 inches, with shortening or line with paper cups.
2. Beat bananas, oil, egg and sugar and vanilla in large bowl until well blended. Stir in baking mix just until mix is moistened.(batter will be lumpy) Divide batter evenly among muffin cups.
3. Bake about 15 minutes or until golden brown. Cool muffins in pan 5 minutes; Remove from pan to wire rack. serve warm if desired.
FOR LIGHTER MUFFINS:
for 4 grams fat and 145 calories per serving, increase mashed bananas to 1 1/2 cups, decrease oil to 2 Tbsp., substitute 2 egg whites for the egg and use bisquick reduced fat baking mix
