1. In microwave safe bowl, stir sugar, corn starch, and apricot nectar until smooth.
2. Microwave on high for 6-8 minutes or until slightly thickened, stirring every 2 minutes
3. Stir in the vanilla. Refrigerate.
4. In a largebowl, combine thr fruit. Drizzle with dressing, and gently toss to coat.
5. Cover and refrigerate until serving.
