| 3 | Large potatoes, skinned and quartered lengthwise |
| 2 tbsp | Olive oil |
| | Salt to taste |
| 1 to 2 cups | Chopped smoked sausage |
| 1/4 cup | Chopped fresh parsley |
| 4 | Eggs, whisked |
| | Ketchup |
Boil potaotes in pot 10-15 minutes until just cooked. Drain, rinse with cold water to cool. Cut into 1-inch squares. Set aside.
Heat olive oil in large skillet on high heat. Add potatoes. Brown for about 2 minutes, stirring frequently. Sprinkle with salt while cooking. Add sausage to potatoes and cook, stirring frequently until heated through, 1-2 minutes. Mix in parsley. Add eggs, stirring to distribute evenly. As soon as eggs begin to firm up, remove from heat. Serve immmediately with lots of ketchup on the side.
Very adaptable dish. Throw in some veggies or substitue other precooked, bite-sized meat, like hot dogs or chicken. Try different herbs, fresh or a couple teaspoons of dry.
