Ingredients
8 ozs Canned crushed pineapple in juice
1 1/2 cups Water
1 cup Rice
1 tsp Peanut oil
2 Eggs, beaten
1 tsp Sesame oil
12 ozs Firm tofu, cut in 1/2" cubes
1 cup Button mushroom
3 Green onions, sliced
2 Carrots, grated about 1/2 cup
1 cup Broccoli flowerette, in small pieces
1/2 Red bell pepper, chopped
2 tbs Onion, diced
2 tbs Soy sauce
Preparation
l Drain pineapple juice into a measuring cup and add enough water to make 2 cups.
l Bring water and pineapple juice mixture and rice to a boil, then reduce to a simmer and cook until rice is done.
l While rice is cooking, heat peanut oil in a wok, and add egg.
l Cook without stirring until set, then lift out and cut into strips.
l Heat the sesame oil, and stir fry the tofu and vegetables for 4-5 minutes.
l Add the rice, pineapple, and egg strips, and soy sauce, and toss until well mixed.
