Breaded Baked Cod

Ingredients

2 slices Whole wheat bread, torn

2 Eggs

1 tbsp Water

1 1/4 lbs Cod or scrod filet, cut into 1"-1 1/2" pieces

1/2 tsp Salt

1/4 tsp Ground black pepper

Preparation

Preheat the oven to 400 degrees F. Coat a baking sheet with cooking spray.

Place the bread in a food processor and process into fine crumbs.

Place in a shallow bowl. In another bowl, beat the eggs with the water. Season the fish with the salt and pepper. Dip in to the eggs, then in to the bread crumbs. Place on the prepared baking sheet and generously coat the breaded fish with cooking spray. Bake until opaque inside, 10 minutes. Serve with tarter sauce.
