Pasta Salad Nicoise

Ingredients

1/4 cup Fat-free Italian dressing

1/4 cup Chopped fresh basil leaves

2 cloves Garlic, minced

1/4 tsp Red pepper flakes

2 cups Cooked multigrain or whole wheat pasta shells or rotini, rinsed in cold water and drained

1 can (6 oz) tuna, packed in water drained and flaked

3/4 cup Diced tomato

1/4 cup Thinly sliced red onion

2 Tbls chopped black olives

1/8 tsp Slat

1/4 tsp Black pepper

4 Leaves breen leaf lettuce

Preparation

1. Combine dressin, basil, garlic and red pepper in small bowl.

2. combine pasta, tuna, tomato, onion and loves in large bowl. Add dressing mixture, salt and pepper; toss until evenly coated.

3. To serve, line 4 plates with lettuce leaves; spoon salad over top. Chill until ready to serve.

TIP: This salad is even batter the second day, so its a good candidate for a make-ahead meal.

Variation: If you'd prefere a wrap or a sandwich instead of a salad, omit the pasta when preparing this recipe. Use the resulting nicoise mixture and lettuce leaves on lices of whole grain or whole wheat bread, or fill a whole wheat tortilla and roll it up to make a wrap.
