Meatball Open-Faced Subs

Easy to Make - good for make ahead and on the go sandwiches

Ingredients

8 oz Extra lean ground beef

4 oz Turkey italian bulk sausage

1/2 pkg (10 oz) frozen chopped spinach, thawed and squeezed dry

8 Reduced fat shredded wheat crackers finely crushed

2 Large egg whites

1 Tbls dried basil divided

1 1/3 cups Prepared spaghetti sauce

1 Baguette (6 oz) whole wheat french bread, cut in half lenghtwise and then halved crosswise

1 Medium clove garlic, cut in half crosswise

Preparation

1. Mix together ground beef, sausage, spinach, crused crackers, egg whites and 1 tsp basil in medium bowl unti well blended. Shape into 16 meatballs.

2. Heat medium non stick skillet over medium high heat until hot. Coat skillet with non stick cooking spray. Add meat balls. Cook 5 minutes or until beginning to brown turning frequently. (Use a fork and a tablespoon for easy turning). Add spaghetti sauce and remaining basil. Bring to a boil over medium high heat. Stir gently. Reduce heat. Cover. Simmer 7 - 8 minutes or until meatballs are firm and no longer pink in center.

3. Preheat broiler. Place bread under broiler until lightly toasted. Rub cut sides of bread with cut sides of garlic. Place 4 meatballs on each bread slice. Top with equal amounts of sauce.
