Shrimp and Broccoli Stir-Fry w/brown rice

Ingredients

5 oz. Fresh or frozen medium-sized, shrimp

2 tsp. Canola oil

1 clove Garlic

2 cups Fresh broccoli

1 Medium red bell pepper

3 tsp. Lite soy sauce

2 tbsp. Sherry wine

Brown rice

Preparation

If using fresh shrimp, shell, devein and rinse. If using frozen shrimp, defrost, rinse and pat dry . Rinse and chop broccoli and red pepper; mince garlic; set aside. Heat oil in a non-stick skillet to medium high heat; sauté garlic for about 1 minute. Add vegetables and stir fry until tender, but still crisp, about 3-4 minutes. Mix soy sauce with sherry in a small bowl. Add shrimp to the skilltet with soy sauce mixture and stir-fry about 2-3 minutes. Serve.
